Watercress Tea Sandwiches

  • 1 bunch watercress

  • 1/4 cup parsley leaves, finely chopped

  • 1/4 cup butter, softened (or margarine for Vegan)

  • 4 ounces cream cheese, softened (or vegan cream cheese)

  • 2 tablespoons of chopped chives

  • 8 slices of bread

  1. Blend chopped parsley, butter, cream cheese, and chives. (Alternately, blend in a food processor.

  2. Butter the bread with the butter mixture.

  3. Layer watercress on four of the bread slices and cover with the other four slices.

  4. Remove crusts and cut into finger-sandwich-sized shapes.

What would a tea party be without watercress sandwiches?
