Watercress Tea Sandwiches
1 bunch watercress
1/4 cup parsley leaves, finely chopped
1/4 cup butter, softened (or margarine for Vegan)
4 ounces cream cheese, softened (or vegan cream cheese)
2 tablespoons of chopped chives
8 slices of bread
Blend chopped parsley, butter, cream cheese, and chives. (Alternately, blend in a food processor.
Butter the bread with the butter mixture.
Layer watercress on four of the bread slices and cover with the other four slices.
Remove crusts and cut into finger-sandwich-sized shapes.
What would a tea party be without watercress sandwiches?
