Strawberry Butter

  • 1/2 cup butter (one stick) softened

  • 1/4 cup fresh strawberries, washed and hulled

  • 2 to 3 tablespoons confectioners’ sugar

  1. Cut the butter into 6 to 8 pieces and put it in the food processor with the strawberries. Process the butter and strawberries, adding the confectioners' sugar while doing so, until the butter is smooth and even-colored.

  2. (To mix by hand, cream the butter and sugar, then mash the strawberries with a fork and mix them with the butter mixture.)

This was really good on scones. And it turns out a lovely pinkish color that looks great on a tea table.
