Pineapple Ham Salad Tea Sandwich Filling

  • 1 pound ham, cubed

  • 1/2 cup mayonnaise, plus more if needed

  • 2 tablespoons whole-grain mustard

  • 1 1/4 cup drained pineapple tidbits and 1 tablespoon of the pineapple juice

  • 1/2 small red onion, finely chopped

  1. Pulse the ham in a food processor until finely chopped, but not pureed.

  2. Whisk together the mayonnaise, mustard, and pineapple juice in a medium bowl, and fold in the ham and onions.

  3. If the salad seems dry, add more pineapple juice or mayonnaise to taste.

  4. For Tea sandwiches, spread on bread and cut off the crusts before cutting each large sandwich into finger sandwiches.

  5. For Low Carb or Gluten Free options, fill cucumber or tomato cups, or mini peppers.

A fruity ham salad, suitable for Tea Sandwiches.
