Cucumber and Mint Butter Tea Sandwiches
1/2 cup butter, softened (margarine for Vegan)
3-4 tablespoons fresh mint leaves, chopped
1 large cucumber, peeled and thinly sliced
12 slices thinly-sliced sandwich bread
In a small bowl, combine the butter and mint and mix well.
Spread the mint butter on all slices of bread.
Cover half of the buttered bread slices with cucumber, about 6 slices per samdwich.
Top with the remaining bread.
Remove crusts and cut into finger-sandwich-sized shapes.
