Cucumber and Mint Butter Tea Sandwiches

  • 1/2 cup butter, softened (margarine for Vegan)

  • 3-4 tablespoons fresh mint leaves, chopped

  • 1 large cucumber, peeled and thinly sliced

  • 12 slices thinly-sliced sandwich bread

  1. In a small bowl, combine the butter and mint and mix well.

  2. Spread the mint butter on all slices of bread.

  3. Cover half of the buttered bread slices with cucumber, about 6 slices per samdwich.

  4. Top with the remaining bread.

  5. Remove crusts and cut into finger-sandwich-sized shapes.
