Grilled Mascarpone Cheese Sandwiches

  • 1 8-oz container Mascarpone cheese, softened to room temperature

  • 1 8-oz block of cream cheese, likewise softened

  • 1 tablespoon heavy cream

  • 2 tablespoons honey

  • 16 slices of bread

  • 1 stick butter, softened

  1. Whip the Mascarpone, cream cheese, and honey together in a bowl.

  2. Butter the outsides of the bread slices, then spread the insides with cheese mixture.

  3. Carefully cut off crusts.

  4. Grill in a skillet, sandwich press, or griddle until golden-brown on the outside.

  5. Slice into sandwich fingers and serve while still warm.

Once upon a time, our friends Mem Morman and Kent Bloom had an anniversary tea party at the Garden Of The Gods. Everything was lovely and elegant, but our favorite dish was these dainty grilled mascarpone cheese sandwiches. We loved them so much, we asked the caterers for the recipe, and they promised to send it, but they never did. This is my re-creation.
