Salmon Cream Cheese filling for Tea Sandwiches

  • 3/4 pound Honey Smoked Salmon

  • 2 8 ounce packages Philadelphia cream cheese

  • 3.5 ounce bottle of capers

  • Diced red onion

  • Fresh dill

  • One dozen mini bagles

  1. Put the cream cheese in a mixing bowl. Warm cream cheese slightly in the microwave.

  2. Remove the skin from the salmon and crumble into the mixing bowl. I hate the lingering odor on my hands, so use plastic gloves to handle the salmon.

  3. Using a pastry blender, mix the salmon uniformly into the cream cheese.

  4. Add capers and onions to taste.

  5. Spread on mini bagels. A full bagel is larger than tea-sized; recommend serving these open-faced, perhaps with a dill leaf garnish.

  6. For a Gluten Free or Low Carb option, stuff mini peppers, cocktail tomato, or cucumber cups with the filling.
